Sweet Mint Tea

This flavor was one of the first pâte de fruits that I offered when I started Yami Yami.

It happened on a Summer day while thinking about seasonal flavors. It was really hot in my Oakland kitchen so I was reaaally craving a glass of iced sweet mint tea…and then I thought, what if I try to replicate that flavor in my pâte de fruit? When thinking about flavor combinations, I knew I wouldn’t only be using fruit, but also spirits, that’s what we were doing @craftsmanwolves where I learnt a few years ago, the boozy ones were amongst the most popular... aaand it occurred to me, what about tea? I certainly enjoy drinking it in the Summer months!

Sweet mint tea’s strength comes from black tea but it’s tamed by the sweetness of mint leaves…these sweeties are my version of this traditional southern drink! The mint flavor doesn't come from an extract, which would give it more of a menthol taste, but from infusing spearmint leaves into homemade simple syrup making it linger on your palate. For the black tea, I use Assam whole leaves grown in biodynamic farms from @alayatea, I also add a bunch of spearmint leaves to the brew just in case 😉
