I’m also proud to say that there’s no flavorings (natural or artificial) nor colorants—these vibrant colors are real! I only use organic whole fruit from local farmers.
Some pâte de fruit & gummies contain additives and a higher amount of sugar to ensure a long shelf life. In my case, I’ve chosen to work in small batches and use as little sugar as the fruit allows me, making sure to offer a product as fresh as possible.
You won’t find corn syrup in them either, I use a very small amount of glucose (less than 3.5%). Glucose is derived from wheat but it’s gluten free, it’s used for texture but most importantly, it’s needed to stop early crystallization…which would leave a very gritty feeling on your tongue.
And of course, they are VEGAN! Apple pectin is used as a setting agent, with the help of sugar and a little bit of citric acid. Some ‘pâte de fruit’ may add starches (like cornstarch) or animal gelatine to again, ensure a longer shelf life, so please, if you are vegetarian or vegan, check the ingredients, as not all pâte de fruit is made following the traditional recipe.
